IPA: India Pale Ale

Classic, robust hoppy Pale Ale, aging recommended:

8lbs Light Malt Extract
12 oz British Pale Malt
8 oz Crystal 40L Malt
4 oz Dextrin (Carapils) Malt
4 oz Wheat Malt
2 oz Columbus or (2nd option) 2oz Chinook  and 2 oz Cascade hops total:
2 oz Columbus @ 60 minutes
1 oz Cascade @ 5 minutes
1 oz Cascade @ 0 minutes

2 tsp gypsum and 1 tsp Irish Moss package, added at beginning of boil

Liquid yeast options:  1st choice Wyeast 1098 British Ale Yeast or Dry yeast options: Dry-97 West Coast or Safale S-05

3/4-cup dextrose for bottle priming on bottling day   

Starting Gravity:1.059-1.060    ABV: 5.9-6.2%    SRM: 7-9    IBU: 64-66
